Ingredients
- 3 medium-sized yellow squash (about 1 1/2 pounds)
- 2.6 ounces crumbled reduced fat feta cheese (about 2/3 cup)
- 1/2 panko (Japanese breadcrumbs)
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon freshly ground black pepper
- 1 large egg, lightly beaten
- Cooking spray
Instructions
- Shred squash; squeeze excess liquid from squash, and discard liquid. Combine squash, cheese, and next 4 ingredients in a bowl. Divide squash mixture into 12 equal portions, shaping each into a 3/8-inch thick patty.
- Coat both sides of patties with cooking spray. Place patties on a hot nonstick griddle or in a nonstick skillet. Cook 3 minutes on each side or until lightly browned.
