Pork Chops with Almond Sauce

This recipe calls for low-sugar orange marmalade, but I was never able to find any so I used the regular version. If you can find the low-sugar version, then it is 7 Points Plus (or 8 Smart Points) for a serving. You can also add 1/4 teaspoon of dried thyme. Add the thyme when you add the marmalade.
Ingredients
- 1/3 cup sliced almonds
- 8 (2 ounce) boneless center-cut loin pork chops (about 1/4-inch thick)
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 tablespoons all-purpose flour
- 1 tablespoon canola oil
- 1/2 cup fat-free lower-sodium chicken broth
- 3 tablespoons orange marmalade
- 1 tablespoon butter
- Cooking spray
Instructions
- Heat a small skillet over medium heat. Add almonds to pan; coat almonds with cooking spray. Cook 2 to 3 minutes or until lightly toasted, stirring occasionally. Remove almonds from pan; set aside.
- Sprinkle pork with salt and pepper; dredge in flour. Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Add half of pork to pan; cook 2 minutes on each side or until done. Remove pork from pan; keep warm. Repeat procedure with remaining 1 1/2 teaspoons oil and pork.
- Add broth to pan, scraping pan to loosed browned bits. Add orange marmalade; cook 1 minute or until marmalade melts and mixture is slightly thick, stirring constantly. Add toasted almonds and butter, stirring until butter melts. Spoon sauce over pork.
