Ingredients
- 8 ounce package sliced fresh mushrooms
- 1 teaspoon margarine
- 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
- 1/4 cup port or other sweet red wine
- 1/4 cup no-sugar added black cherry spread
- 1/4 teaspoon salt
- 1/4 teaspoon peppe
- 1/8 teaspoon thyme
- 2 cups hot cooked long-grain rice, cooked without salt or fat
- Cooking spray
Instructions
- Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add fresh mushrooms, and sauté 10 minutes. Remove mushrooms from skillet, and set aside.
- Melt margarine in skillet over medium-high heat. Add chicken breast, and sauté 12 minutes or until chicken is no longer pink. Add wine, and cook 3 minutes, stirring constantly. Return mushrooms to skillet; stir in black cherry spread, salt, pepper, and dried thyme. Reduce heat, and simmer, uncovered, until thoroughly heated. Serve over rice.
