Ingredients
- 4 (4 ounce) tilapia fillets
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup light coconut milk
- 3/4 cup panko (Japanese breadcrumbs)
- 1/3 cup flaked sweetened coconut
- Cooking spray
- 4 lime wedges
Instructions
- Preheat oven to 350 degrees.
- Sprinkle fish with salt and pepper. Place coconut milk in a shallow dish. Combine panko and coconut in another shallow dish. Dip fish in coconut milk; dredge in panko mixture. Coat both sides of fish with cooking spray. Place fish on a wire rack on a baking sheet. Discard any remaining coconut milk and panko mixture. Bake at 450 degrees for 12 minutes.
- Increase oven temperature to broil.
- Broil 2 minutes or until fish flakes easily when tested with a fork or until desired degree of oneness. Serve with lime wedges.
